The Olmec civilization of ancient Mexico were the first humans known to consume cacao — as far back as 1500 BCE. They created a bitter fermented drink used in rituals and as medicine. The word “cacao” itself likely has Olmec origins. They understood that the seeds held something magical.

Maya Chocolate Rituals
The ancient Maya called it “kakaw” — a divine gift from their feathered serpent god Kukulkan. Mixed with water, chilli, and spices into a bitter ceremonial drink, consumed at royal feasts and weddings. Cacao beans were so valuable that Maya used them as currency. The earliest written record of chocolate dates to Maya texts of 600 CE.

Xocolātl — Drink of Warriors
Emperor Moctezuma’s Obsession
Emperor Moctezuma II reportedly drank 50 golden goblets of “xocolātl” (bitter water) daily, believing it gave wisdom and strength. Aztec warriors drank it before battle. 100 cacao beans could buy a turkey — more precious than gold. The drink was reserved strictly for rulers, warriors, and priests.

Hernán Cortés · The Founder of Modern Chocolate
Spanish conquistador Hernán Cortés met Moctezuma in 1519 and brought cacao beans back to Spain in 1528 — the moment that changed world history. Spanish royalty added sugar and honey to the bitter drink and fell deeply in love. Spain kept chocolate a royal secret for nearly 100 years before it spread across Europe.

Coenraad van Houten · 1828
Dutch chemist Coenraad Johannes van Houten invented the hydraulic cocoa press in 1828 — separating cocoa butter from cocoa solids to create fine cocoa powder. His “Dutch Process” made chocolate affordable to the masses and transformed global production. Van Houten’s invention is directly responsible for the rich dark chocolate we know today.

Joseph Fry — Father of the Chocolate Bar
Joseph Fry of J.S. Fry & Sons created the first solid chocolate bar for eating in 1847 by mixing cocoa powder, sugar, and cocoa butter into a mouldable paste. Before Fry, chocolate was always a beverage. This single invention sparked a global industry worth over $130 billion today.

Birth of Milk ChocolateDaniel Peter × Henri Nestlé
Swiss chocolatier Daniel Peter spent 8 years trying to add milk to chocolate. The breakthrough came when neighbour Henri Nestlé invented condensed milk — Peter used it to create the world’s first milk chocolate in 1875, launching the Nestlé brand. Then Rodolphe Lindt invented “conching” in 1879 — creating the smooth, melt-in-mouth texture we know as Lindt chocolate.
